Grilled Fish in Pepper Jack and Mixed Mushroom
Ingredients:
- 1 fresh red snapper or fresh tilapia - fillet it
- 1/2 bag mix dried mushroom - soak and roughly chop
- 1 slice pepper jack cheese - about the same size as fillet fish with 1/2 inch thick
- 1 tbsp grated parmesan cheese
- Some fresh rosemary for garnish - optional
- 1 tbsp butter
- 1 minced fresh garlic
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 tbsp lemon juice
- 2 tbsp olive oil and some to brush the griller
- Cracked black pepper and salt
- Mix a tbsp olive oil, dried basil, garlic powder, lemon juice, some crack pepper and salt, then gently marinate the fillet fish.
- Heat the griller and lightly brush with olive oil and grill the marinated fillet fish until golden on both sides. Just like a burger, place the slice pepper jack cheese in-between the fish.
- Heat another tbsp of olive oil, the butter and fry the garlic until fragrant, then add the chopped mushrooms.
- Stir it for a few seconds and add a pinch of salt and pepper. Gather all the mushrooms and sprinkle the parmesan cheese on top then with a big spatula move the mushrooms onto the grilled fish. Sprinkles with fresh rosemary if you like and cut.
- Serve while it is hot.
