Sweet Potato Pancake Recipe To Keep You Looking Young

Sweet Potato Pancake
Sweet potato is one of those foods that keep you looking young.  They are high in carotenoids.  Carotenoids are great antioxidants that fight cancer causing agents and to help protect against the effects of aging.  You can say the more you eat, the younger you may look.

My own original recipe.
Prep Time: 15 minutes / Cook Time 15 minutes

Eating Sweet Potato Pancake Keeps You Young

  • 1/2 cup mashed sweet potato
  • 1/2 cup of whole milk
  • 2 egg yolks
  • 2 eggs white
  • 2 tbsp olive oil
  • 4 tbsp all purpose flour
  • 1/2 teaspoon baking powder
Cooking Directions:
  1. Mix all the ingredients together well except for the egg white. 
  2. Beat the egg white until they're stiff and add it into the batter.  
  3. Gently mix the batter well and allow it to rest for 5 to 10 minutes.
  4. Heat a non-stick pan and brush with a little butter and start making and frying the pancakes. 
  5. Serve with maple syrup or honey.
