Baked Turkey Thigh

Baked Turkey Thigh
You don't have to wait until Thanksgiving to enjoy turkey.  Here's a nice baked turkey thigh to enjoy for lunch or dinner.
  
My own original recipe.
Prep Time: 15 minutes / Cook Time 35 minutes

Ingredients:

3 turkey thighs - remove the bone
Two stems fresh rosemary- trim and chop
1/4 cup olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
2 teaspoon cracked black pepper
Squeezed lemon juice from 1 lemon
Pinch of salt if you like

For The Brine:

2 big shallots - slice
Slice lemon peel - from 1 lemon
4 cloves cracked garlic
3 bay leaves
1 tbsp cracked coriander seed
1 tbsp cracked black pepper
4 stems fresh rosemary
4 stems fresh thyme
50 grams salt per 1 litter water

Method:

Mix together all the brine ingredients in a big container, then add the turkey and let sit over night.

Dry the turkey with a kitchen paper towel and marinate with the seasoning above except for the lemon juice.  Fry the turkey until golden to bring it a nice brown color and add the lemon juice.  Continue the cooking process in 350 degrees oven for about 30 to 35 minutes or until the turkey is cooked.   Let it cool before cutting like the picture above.
