Stuffed Portobello Mushrooms

Stuffed Portobello Mushroom
My own original recipe.
Prep Time: 10 minutes / Cook Time 25 minutes


3 big portobello mushrooms
2 fresh chicken sausages - squeezed out the meat
1/2 cup dice red bell pepper
1/4 cup crust crouton
1/4 cup cooked spinach
1/2 cup dice mini heirloom tomato
1/2 cup dice mild cheddar cheese
1/4 cup grated parmesan cheese
1 teaspoon crack black pepper
1 teaspoon garlic powder
1/2 cup chicken stock
Pinch of salt


Remove the stem and with a spoon clean up the brown part of the inside of the mushroom.  In a bowl, mix all the ingredients together (except for the chicken stock) and stuff them into the mushrooms.  Place the stuffed mushrooms onto a baking pan and pour the chicken stock in between the mushrooms, then bake for 20 to 25 minutes over 350 degrees.  Take out and serve.
