Indonesian Stew Young Jack Fruit (Gudeg Nangka)

Indonesian Stew Young Jack Fruit (Gudeg Nangka)
My own original recipe.
Prep Time: 10 minutes / Cook Time 20 minutes


1 can Thailand young jack fruit - you can buy at an Asian grocery store
1/3 cup coconut milk
3 bay leaves
1/2 liter chicken stock
2 tbsp vegetable oil
2 tbsp soy sauce - optional (to increase the taste)
Pinch of salt

For The Seasoning:

3 cooking red chilies - more if you like
2 candle nuts
2 cloves garlic
2 medium size shallots
1/2 thumb size galanga
1/2 tbsp coriander seed or 1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 medium tomato


Cut and rinse the young jack fruit and bring to boil with 1/2 liter of chicken stock and the bay leaves. 

Using a food processor, blend all the seasoning above until smooth, then saute with two tbsp vegetable oil until fragrant.  Add the seasoning into the jack fruit and simmer over medium heat, then add the coconut milk, soy sauce and pinch of salt.  Turn off the heat when the juice is reduce.  Serve immediately.

Note: If you are using coriander seed, you have to grind it first.
