Indonesian Braised Eggplant

Indonesian Braised Eggplant
My own original recipe.
Prep Time: 15 minutes / Cook Time 20 minutes


1 big eggplant - anykind
1/4 cup coconut milk
2 tbsp soy sauce
1 tbsp sweet soy sauce
2 tbsp vegetable oil
2 bay leaves
1 cup water or chicken stock

For The Seasoning:

3 candle nuts
1/2 tbsp pepper seed
2 shallots
2 cloves garlic
2 red chillies
1 teaspoon turmeric
1 thumb size galanga
1 small tomato or 2 tbsp water


Cut the eggplant in the shape as you desire.  Grind or blend all the seasoning together and fry in two tbsp vegetable oil until fragrant over medium-low heat.  Then add one cup water and the cut eggplants.  Add the soy sauce, sweet soy sauce, bay leaves and coconut milk, add some more salt if it's not enough.  Simmer until the eggplant is cooked.
