Bitter Melon in Egg

Bitter Melon in Egg
My own original recipe.
Prep Time: 10 minutes / Cook Time 10 minutes


1 medium bitter melon
3 eggs
2 teaspoon sesame oil
1 teaspoon garlic powder
1 tbsp soy sauce
1 teaspoon cayenne pepper or chili flakes
2 tbsp olive oil
Pinch of salt


Cut the bitter melon in half and empty the seeds, then slice them by half inch thick.  Place the sliced bitter melon in a bowl and sprinkle with 1/2 tbsp of salt then with your hand, massage or lightly knead to squeeze out the bitterness.  Rinse a few times in running water.

Beat the eggs and add the seasoning except for the olive oil.  In a non-stick pan, heat one tbsp of olive oil and fry the bitter melon only half cook with a little salt.  Then pour the egg into the bitter melon and cook over medium-low heat until golden.  Flip the fried bitter melon using a big spatula to cook the other side.  Cut and serve.
