Baked Quinoa and Scallop

Baked Quinoa and Scallop
My own original recipe.
Prep Time: 20 minutes / Cook Time 35 minutes


2 cups cooked quinoa
5 jumbo scallops
2 eggs
1/2 cup parmesan cheese (save some for sprinkles)
1 tbsp chopped fresh basil
Black pepper and salt

For The Scallop:

1 teaspoon black pepper
1 tbsp olive oil
1 teaspoon garlic powder
1 tbsp butter
1 teaspoon chopped fresh oregano
pinch of salt


Mix the cooked quinoa with the egg, chopped fresh basil, black pepper, salt, and parmesan cheese.  Then place on a baking plate and sprinkle with the parmesan cheese you saved earlier.  Bake the quinoa until golden over 350 degrees.

First, clean and dry the scallop, then marinate with black pepper, olive oil, garlic powder, fresh oregano and pinch of salt.  Heat a tbsp of butter over medium heat and fry the scallop until golden brown.  Serve with the baked quinoa.
