|Tuna Albacore Spring Roll|

2 palm size fresh or frozen tuna albacore
14 sheets spring roll skin
Some Asian spinach
1 egg yolk to brush or use water instead
1/2 tbsp dried basil
1/2 tbsp fresh oregano - trimmed
Black pepper and salt
Vegetable oil to fry
Cut and divide the tuna into seven slices. Flatten each tuna with a knife and sprinkle them with black pepper, dried basil, fresh oregano, and salt then roll it back.
On a cutting board, place three to four spinach leaves and place one tuna at the edge of the spinach then roll it. Continue until all tuna slices are done. Place two layers of spring roll skin on the cutting board and brush the edge with egg yolk then wrap it. Then fry the tuna roll in a hot oil pan until golden and crisp. Serve with your favorite chili sauce.
