Pan Fry Eggplant in Garlic and Soy Sauce

Pan Fry Eggplant in Garlic and Soy Sauce
My own original recipe.
Prep Time: 10 minutes / Cook Time 15 minutes

Ingredients:

1 medium Chinese eggplant
4 cloves of minced garlic
2 tbsp soy sauce
2 tbsp olive oil or vegetable oil

Method:

Fry the chopped garlic in a tbsp of olive oil until fragrant or golden brown, then transfer into a small bowl.  Clean and cut the eggplant as you desire and fry in a tbsp of olive oil until they're cooked.  Transfer onto a serving plate, sprinkle with fried garlic and soy sauce.  Serve.
