Easy Pecan Salad

Easy Pecan Salad

My own original recipe.
Prep Time: 15 minutes / Cook Time 0 minutes


1 cup toasted pecan
1 orange
1 cup baby spinach
1 cup cherry tomato - cut in half
3 boiled eggs - use only egg whites

For The Dressing:

2 teaspoon honey
1 squeezed lime or lemon juice
2 shallots - chopped
2 tbsp olive oil or more (depending on how you like)
1 teaspoon Dijon mustard
Black pepper and salt


Cut the egg whites and place in a salad bowl.  Then put in the baby spinach and the cherry tomatoes.  Peel the orange to the meat, cut the orange meat in between the white parts and place them into the salad bowl.

In a small bowl, squeeze the rest of the orange and whisk with all the dressing ingredients.  Pour into the salad bowl and toss it to combine, so they're well mixed.
