Potato Stuffed Mango Chicken Salad

Potato Stuffed Mango Chicken Salad
Adapted recipe.
Prep Time: 20 minutes / Cook Time 20 minutes

Ingredients:

6 medium potatoes
Vegetable oil to fry
1 cup mashed potato

For Mango Chicken Salad:

1 cup diced cooked chicken
1 cup sliced ripe mango
2 tbsp lemon juice
2 tbsp mayonnaise
1 teaspoon honey
Ground black pepper and salt

Method:

Wash the potato and cut the top.  Empty the inside by using an apple peeler or a small sharp knife, then rub the skin with some salt.  Cut the bottom of the potato to make it stand then fry the potato until golden or cooked.

In a bowl, whisk the mayonnaise, lemon juice, honey, ground black pepper and pinch of salt.  Then add the chicken and the mango.  Fill the cooked potato with the mango chicken salad, then spoon some mashed potato and place on top of the potato.  Serve.
