Mini Burger Scallop

Mini Burger Scallop
Adapted recipe.
Prep Time: 25 minutes / Cook Time 15 minutes


6 jumbo scallops
6 mini burger buns - cut in half and toast
1/2 box of alfalfa sprout
1 tbsp olive oil
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 tbsp butter
Some of fresh basil leaves
Some feta cheese
Some salt

For The Spread:

3 big slices of can artichoke - mashed
1/4 cup mayonnaise
2 tbsp olive oil
2 tbsp lemon juice
2 teaspoon honey
Black pepper and salt

For The Dressing:

1 squeezed lemon juice
2 tbsp olive oil
Black pepper and salt


Marinate the scallops with olive oil, black pepper, garlic powder and some salt and fry in one tbsp butter over medium heat until golden.

Whisk the dressing ingredients and mix it well with the alfalfa sprouts then set aside.

Mix together all the ingredients for the spread and spread it onto the toasted mini burgers then place some  fresh basil leaves.  Place some alfalfa sprout salad on top of the basil leaves and sprinkle with feta cheese, then place the scallops on top.  Put the topper of the burger bun on top and serve.
