|Fried Fish in Soy Sauce and Ginger|
Prep Time: 15 minutes / Cook Time 15 minutes
1 basa fish fillet
1 medium cucumber
1 tbsp soy sauce
1 tbsp fresh ginger juice
1 tbsp water
1 tbsp cooking oil or olive oil
For The Cucumber:
1 teaspoon miso paste
1 teaspoon sesame oil
Salt or soy sauce if necessary
Coat the fish fillet with the cornstarch evenly and fry in medium heat until golden and set aside. In a bowl, mix the soy sauce, ginger juice, water and 1 teaspoon cornstarch. Cook in low-medium heat until thicken. Add the fish into the pan and cook until all the sauce sticks to the fish.
Peel and cut the cucumber in half, then empty all the seeds inside and cut the cucumber diagonally. Mix the miso paste, black pepper, pinch of salt and sesame oil, then pour into the cucumber. Taste the miso paste first before use, some of them may already be salted.
Scoop some rice onto a serving plate with some of the pan fried cooked fish and the cucumber salad like the image above.
