|BBQ Beef Rib with Potato Cake|
Prep Time: 15 minutes / Cook Time 90 minutes
2 lb beef ribs
1 1/2 teaspoons coriander powder
1 teaspoon cumin powder
1 teaspoon cayenne pepper
2 teaspoons garlic powder
1 teaspoon paprika powder or chili powder
1/2 cup ketchup
1 teaspoon black pepper
2 teaspoons dried basil
1/4 cup tamarind juice
2 teaspoons brown sugar
2 teaspoons honey
For The Potato Cake:
2 medium potatoes
10 olive - chopped
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
Salt to taste
Mix together all the ingredients, then massage the rib with 1/2 cups of the BBQ sauce and let it sit for 2 hours. Place the ribs into a baking pan and cover with aluminium foil then bake for one and a half hour or until tender. At the same time, wrap the potato with aluminium foil and bake until cook.
Take out the ribs, brush the rib with the rest of the BBQ sauce. Then put it back in the oven with the cover on and bake for another 10 to 15 minutes.
Mean while, mash the potato and add the chopped olive, garlic powder, ground black pepper and pinch of salt. Make a shape as you desire and fry in a non-stick frying pan with a little rub of olive oil.
Serve the BBQ ribs with the potato cake and some boiled french beans. See picture above.
