Salmon in Mozzarella Cheese

Salmon in Mozzarella Cheese
My own original recipe.
Prep Time: 25 minutes / Cook Time: 20 minutes
Salmon in Mozzarella Cheese

  • 3/4 lb. salmon fillet
  • 1/2 cup cooked spinach
  • 2 stalks fresh basil
  • 1/2 cup scramble mozzarella cheese
  • 1 teaspoon garlic powder (optional)
  • Ground black pepper
  • 1 tbsp lemon juice
  • 1 tbsp olive oil or more
  • 1/2 cup crusted croutons or bread crumb
  • salt to taste
Cooking Directions:
  1. Wash the salmon and dry it with a paper towel. Then cut in the shape as you desire. 
  2. Marinate the salmon with black pepper, garlic powder, lemon juice, salt and olive oil, let it sit for 15 minutes.
  3. Meanwhile, roughly chop the cooked spinach and fresh basil and place them into a medium bowl then add pinch of salt and ground black pepper. 
  4. Using a greased baking pan, bake the salmon over 350 degrees for 10 minutes. Then take it out.
  5. With your hand, place the spinach on top of the salmon and the mozzarella cheese on top of the spinach. 
  6. Finally sprinkle them with crusted croutons or bread crumbs, then continue baking for another 7 to 10 minutes over 300 degrees. 
  7. Serve and enjoy.
