Salmon in Mozzarella Cheese
Ingredients:
- 3/4 lb. salmon fillet
- 1/2 cup cooked spinach
- 2 stalks fresh basil
- 1/2 cup scramble mozzarella cheese
- 1 teaspoon garlic powder (optional)
- Ground black pepper
- 1 tbsp lemon juice
- 1 tbsp olive oil or more
- 1/2 cup crusted croutons or bread crumb
- salt to taste
- Wash the salmon and dry it with a paper towel. Then cut in the shape as you desire.
- Marinate the salmon with black pepper, garlic powder, lemon juice, salt and olive oil, let it sit for 15 minutes.
- Meanwhile, roughly chop the cooked spinach and fresh basil and place them into a medium bowl then add pinch of salt and ground black pepper.
- Using a greased baking pan, bake the salmon over 350 degrees for 10 minutes. Then take it out.
- With your hand, place the spinach on top of the salmon and the mozzarella cheese on top of the spinach.
- Finally sprinkle them with crusted croutons or bread crumbs, then continue baking for another 7 to 10 minutes over 300 degrees.
- Serve and enjoy.
