Rotini with Vegetables

Rotini with Vegetables
My own original recipe.
Prep Time: 10 minutes / Cook Time 15 minutes
Rotini with Vegetables

  • 2 cups rotini
  • Some chicken sausages - cut
  • 1 cup cherry tomato
  • 10 button mushrooms
  • 1 medium size carrot - cut
  • 6 peeled red pearl onions
  • 6 peeled yellow pearl onions
  • 3 stems fresh basil - trim
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup parmesan cheese
  • Ground black pepper and salt
Cooking Directions:
  1. Bring to boil the rotini in salt water. 
  2. Heat a tbsp of butter in a heavy skillet over medium heat, add the chicken sausages and the mushrooms and cook until golden then set aside.
  3. Using the same skillet, add chicken broth, the red onions, yellow onions, carrots, and cook them in a tbsp of butter for a few minutes with the cover on. 
  4. Then add the rotini into the skillet, stir in the garlic powder, ground black pepper, some salt and olive oil. Turn off the heat. Add the fresh basil and the parmesan cheese. 
  5. Transfer onto a serving plate and enjoy.
