Veggies And Red Bean Salad
Ingredients:
- 3 oranges
- 1 small can red bean
- 1 bulb medium fennel
- 4 sheets lettuce
- 1 cup cherry tomato
- 1/2 teaspoon Dijon mustard
- 1 teaspoon dried parsley
- 1/2 teaspoon ground black pepper
- 1 lemon squeezed
- 1/2 teaspoon lemon zest
- 1/2 tbsp apple cedar vinegar
- 2 tbsp extra virgin olive oil
- 1/2 tbsp honey
- salt to taste
- Wash and peel the oranges and cut the orange meat between the hard part.
- Trim the fennel bulb, wash it and slice thinly. Then wash the lettuce and tear into smaller pieces and dry it with a strainer.
- Cut in half the cleaned cherry tomatoes and rinse the red bean. Place it all into a big bowl except for the orange meats.
- Mix together all the salad dressing in a glass jar and shake it well, whisk if you use a regular bowl.
- Pour the salad dressing into the salad bowl, toss it to combine and arrange the oranges meat in between.
