Veggies And Red Bean Salad
My own original recipe.
Prep Time: 15 minutes / Cook Time: 0 minute
Veggies And Red Bean Salad

  • 3 oranges
  • 1 small can red bean
  • 1 bulb medium fennel
  • 4 sheets lettuce
  • 1 cup cherry tomato
For Dressing:
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 1 lemon squeezed
  • 1/2 teaspoon lemon zest
  • 1/2 tbsp apple cedar vinegar
  • 2 tbsp extra virgin olive oil
  • 1/2 tbsp honey
  • salt to taste
Cooking Directions:
  1. Wash and peel the oranges and cut the orange meat between the hard part. 
  2. Trim the fennel bulb, wash it and slice thinly. Then wash the lettuce and tear into smaller pieces and dry it with a strainer. 
  3. Cut in half the cleaned cherry tomatoes and rinse the red bean. Place it all into a big bowl except for the orange meats.
  4. Mix together all the salad dressing in a glass jar and shake it well, whisk if you use a regular bowl. 
  5. Pour the salad dressing into the salad bowl, toss it to combine and arrange the oranges meat in between.
