Stuffed Rice Croquette

Stuffed Rice Croquette
I adapted this from Create TV.
Prep Time: 25 minutes / Cook Time: 15 minutes
Stuffed Rice Croquette

  • 1 plate cooked rice
  • 1 cup all purpose flour
  • 3 beaten eggs
  • 1 cup Japanese panko bread crumb or more
  • Vegetable oil for deep fry
For Stuffing:
  • 1/2 cup mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/8 cup sun dried tomato
  • 3 layers of turkey bacon (or any bacon)-grill and chopped
  • 1/2 dried parsley
  • 1/4 teaspoon ground black pepper
  • Vegetable oil to deep fry
  • salt to taste
Cooking Directions:
  1. In a bowl, mix all the stuffing ingredients together and set aside
  2. Scoop the rice and put on your palm; make like a bowl then put some of the stuffing on it and cover it with another rice to look like a ball.  Do it until it is done.
  3. In three different separate plates, place the all purpose flour, beaten eggs and bread crumb. Then roll a rice ball one by one onto the flour and egg evenly, then to the bread crumb. 
  4. Fry them in hot oil until golden brown and dry them on a rack or paper towel. 
  5. Serve and enjoy this delightful rice croquette.
