Stuffed Rice Croquette
Ingredients:
- 1 plate cooked rice
- 1 cup all purpose flour
- 3 beaten eggs
- 1 cup Japanese panko bread crumb or more
- Vegetable oil for deep fry
- 1/2 cup mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/8 cup sun dried tomato
- 3 layers of turkey bacon (or any bacon)-grill and chopped
- 1/2 dried parsley
- 1/4 teaspoon ground black pepper
- Vegetable oil to deep fry
- salt to taste
- In a bowl, mix all the stuffing ingredients together and set aside
- Scoop the rice and put on your palm; make like a bowl then put some of the stuffing on it and cover it with another rice to look like a ball. Do it until it is done.
- In three different separate plates, place the all purpose flour, beaten eggs and bread crumb. Then roll a rice ball one by one onto the flour and egg evenly, then to the bread crumb.
- Fry them in hot oil until golden brown and dry them on a rack or paper towel.
- Serve and enjoy this delightful rice croquette.
