Indonesian Crispy Chicken Lumpia |

Indonesian Crispy Chicken Lumpia
Ingredients:
- 10 to 12 lumpia wrappers (you buy at a grocery store, Safeway has it or an Asian grocery store.)
- 1 cup minced chicken
- 1 medium carrot cut into small dice (1/2 cup)
- 2 dried shiitake mushroom (soak until soft and cut into small dice)
- 1 stick of celery, cut into small dice
- 1 medium potato, cut into small dice
- 1 minced clove of garlic
- 1/4 white pepper powder
- 1 tbsp soy sauce
- 2 eggs
- 1 cup Japanese panko bread crumbs
- 1 tbsp olive oil
- 3/4 cup vegetable oil
- 1 tbsp soy sauce
- 1/2 teaspoon ginger juice
- 1/2 tbsp olive oil
- 1/2 corn starch
- Place the chicken in a medium bowl, then add all the seasoning to the chicken and mix it together to marinate it. Then let it sit for 5-10 minutes.
- For the stuffing, heat 1 tablespoon of olive oil in a saucepan over medium heat, then add the garlic.
- Cook and stir it until you smell a fragrant, then add the marinated chicken, carrot, mushroom, celery and potato. Stir it all in the saucepan, then add pepper, soy sauce, and a pinch of salt to taste and allow it to cook for 7 to 10 minutes.
- When done, set aside and let it cool.
- You will need two plates, one for the beaten egg and another one for the panko bread crumbs.
- In a dry cutting board, place one lumpia wrapper into a shape of a diamond, spoon the stuffing and put them onto the lumpia wrapper. Then wrap it and glue them with water.
- Do it until you have no more stuffiing. Heat the vegetable oil in a deep frying pan, deep fry the lumpia until it's golden and crisp.
- Drain them on a paper towel and serve.
