Easy Chicken Curry with Potato
My own original recipe.
Prep Time: 15 minutes / Cook Time: 20 minutes
Easy Chicken Curry with Potato

  • 1 whole chicken
  • 1 onion
  • 1 thumb size of fresh ginger
  • 2 cloves garlic
  • 1 packet Thai or Malaysian red curry paste
  • 2 stalks of lemon grass (peel and cut in half)
  • 3 medium size potatoes
  • 1/2 cup coconut milk
  • 1 tbsp cooking oil
  • 1/2 liter water, more or less
Cooking Directions:
  1. Peel and wash the potatoes, cut in the shape as you desire then add a pinch of salt to taste. 
  2. Fry it into a hot frying pan until golden brown and set aside. 
  3. Cut and wash the chicken and strain them with a strainer.
  4. Peel the garlic, onion, and the ginger.  Cut them into small dices, then blend them together using a food processor. 
  5. Heat one tbsp cooking oil and fry the blended seasoning over medium heat.  Stir until fragrant, then add the chicken. Keep stirring until the chicken gives off some juice itself, then add the lemon grass, curry paste, and the water (watch when you add the water, you can easily add some more if there's not enough juice).
  6. Mix everything well, then cover. 
  7. When the water is reduced, add the coconut milk and cook until boil.  Then turn off the heat. 
  8. Finally, add the fried potato and serve.
