Clay Pot Rice With Chicken And Shiitake Mushroom
My own original recipe.
Prep Time: 15 minutes / Cook Time: 20 minutes
Clay Pot Rice With Chicken And Shiitake Mushroom

Ingredients:
  • 1 1/2 cup rice
  • 5 oz chicken
  • 2 dried shiitake mushrooms or more (soak until soft)
  • salt to taste
For Marinate:
  • 1 tbsp soy sauce
  • 1 teaspoon ginger juice
  • 1 teaspoon cornstarch
  • 1 tbsp olive oil
  • 1/2 teaspoon pepper powder
Cooking Directions:
  1. Soak the dried mushrooms until soft then cut the stalk. 
  2. Wash and cut the chicken and place in a medium bowl, add the shiitake mushrooms and marinate with the seasoning above. 
  3. Mix them well and let it sit for 10 to 15 minutes.
  4. Wash the rice until the water is clear, add them to a clean clay pot with 1 1/2 cup water and some salt to taste. 
  5. Bring to boil in medium heat with the cover on, but leave a little opening. When the water reduces to the same level as the rice surface, lay the marinated chicken and the shiitake mushrooms and cover completely. 
  6. Then continue cooking over low-medium heat for about 10 minutes. Let it sit for another 10 minutes and allow the rice to become firm. 
  7. Serve and enjoy.
