Clay Pot Rice With Chicken And Shiitake Mushroom
Ingredients:
- 1 1/2 cup rice
- 5 oz chicken
- 2 dried shiitake mushrooms or more (soak until soft)
- salt to taste
- 1 tbsp soy sauce
- 1 teaspoon ginger juice
- 1 teaspoon cornstarch
- 1 tbsp olive oil
- 1/2 teaspoon pepper powder
- Soak the dried mushrooms until soft then cut the stalk.
- Wash and cut the chicken and place in a medium bowl, add the shiitake mushrooms and marinate with the seasoning above.
- Mix them well and let it sit for 10 to 15 minutes.
- Wash the rice until the water is clear, add them to a clean clay pot with 1 1/2 cup water and some salt to taste.
- Bring to boil in medium heat with the cover on, but leave a little opening. When the water reduces to the same level as the rice surface, lay the marinated chicken and the shiitake mushrooms and cover completely.
- Then continue cooking over low-medium heat for about 10 minutes. Let it sit for another 10 minutes and allow the rice to become firm.
- Serve and enjoy.
